Can I Eat Something Sweet Like a Cookie on Keto?

The answer is yes you can, but it will be counted towards your daily carb limit. You would want to limit the amount of refined sugars you eat anyways because you want to avoid the impact it can have on blood sugar and insulin levels.

Alternatively, to prevent blood sugar spikes and using too much of your carb count, you can use sugar alcohols and sweetener blends instead. These sweeteners are considered to be sugar free because they don’t cause blood sugar levels to spike when consumed.

This Keto Chocolate Cookies Recipe

I am a sucker for a good cookie. There is just something so comforting about a soft chewy cookie with a glass of milk. Ever since I started my Keto diet, I have not been satisfied with the cookie recipes that I have tried.  So, with a little bit of trial and error (ok, there were many, many errors!) I finally nailed it!

From now on this is my go to Keto chocolate cookie recipe and I am making it super easy on you to look no further…You have to try them! These Keto cookies are made with almond flour, are soft, chewy, and oh sooo chocolatey – definitely not cakey at all. To top it all off, it’s under 2g of carbs per cookie. I know this is jaw-dropping goodness.

Since these chocolate cookies are so low in carbs, it gives you some wiggle room to experiment by adding some chopped nuts, or any other Keto friendly toppings you might be craving.

Soft and Chewy Keto Chocolate Cookies

Keto diet Chocolate Cookies

Soft, chewy and chocolately Keto cookies.

Prep Time 10 minutes
Cook Time 10 minutes
Additional Time 5 minutes
Total Time 25 minutes

Ingredients

  • 2 ½ tbsp softened Butter
  • 3 Tbsp Keto dark chocolate chopped (I used 85% dark chocolate- Theobroma Brand but you can use any dark chocolate bra)
  • 1 egg
  • 2 tsp vanilla
  • 2/3 cup almond flour
  • 1/3 cup Lakanto Erythritol Monk Fruit Blend Sweetener
  • 4 tbsp Cocoa Powder
  • ½ tsp baking powder
  • 1/8 tsp salt

Instructions

    Pre-heat oven to 325 degrees F.

1. In one bowl combine flour, cocoa powder, salt
and baking powder; using a fork combine ingredients until well incorporated.

2. In a stand mixer on med speed mix eggs, vanilla
extract, and sugar 1 min

3. Slowly add flour mixture to egg mixture until
well combined.

4. Toss in chocolate chunks and stir

5. Make 15 balls and place on a baking sheet with
parchment paper and gently press down lightly to flatten them a little bit

6. Bake for 10 minutes

Notes

Leave the cookies on the baking sheet for 5 minutes to allow them to set before transferring them over to a cooling rack.
