Simple Beef Nachos Recipe with Doritos

Who wouldn’t want nachos for dinner?! The family just loves this loaded nachos recipe. Especially since I usually reserve them for my planned family fun nights where we play different games together for a fun evening and I make this simple nachos recipe!

 

For a mom like me who is usually a stickler for getting a good amount of vegetables and healthy meals into the kids, its kind of a big deal for me to serve them chips for dinner! Ha! But I still manage to find a way to load some vegetables on top.

 

My not-so-secret secret ingredient on how to make nachos that I gave away immediately in the title is….you guessed it, Doritos! Don’t Doritos chips just make everything better? So you can’t really go wrong with making nachos with Doritos chips in my opinion!

 

Lets go over some tips to help make the ultimate nachos!

You will need a couple of good non-stick baking sheets. I like this brand and use their products regularly for baking.

What are some toppings to put on nachos?

The possibilities are endless! Shredded or cubed chicken, olives, guacamole, crumbled feta cheese, sliced onions, sliced pickles, bell peppers, jalapeno peppers. I could go on. You can get as creative as you like!

 

What is the best cheese to put on nachos?

I use Mozzarella and Cheddar in this recipe because they melt nicely. You can also use Monterey Jack like I do with my quesadillas, for that nice gooey, cheesy stretch!

 

How do you make nachos not soggy?

Don’t load on too much of the liquidy ingredients. I personally like to dip my nachos in salsa and sour cream on the side as opposed to putting it on top for this very reason.

 

Also, spread them out well and use 2 sheet pans so that they can really get crispy while baking.

Do you put salsa on nachos before cooking?

If you would prefer to spread the salsa on top of the nachos, I would pre-cook the nachos before adding anything liquidy on top.

 

Can nachos be a meal?

Absolutely! Nachos can have ingredients from all food groups in them such as meat, cheese and corn chips, making nachos a very filling and satisfying meal!

Can you reheat nachos?

I would say that nachos definitely taste better the day you make them. You can reheat them in the oven at a lower temperature however. My technique of leaving the salsa and sour cream for dipping instead of putting them on top really helps because once you store the nachos in the fridge, the cold ingredients really weigh the nachos down and makes them very soggy.

 

Also this nacho recipe is without guacamole, but if you did add it, I would also keep it on the side and not bake the nachos with it on top.

Nachos call out ‘Party Time’ to me! So pull out your sheet pans and lets get started on how to make nachos with Doritos and ground beef!

Simple Beef Nachos with Doritos

Sheet pan nachos with ground beef

Prep Time 20 minutes
Cook Time 6 minutes
Total Time 26 minutes

Ingredients

  • 1 bag of Dorito Nacho Chips
  • 1 bag of Tostitos Chips (Rounds work best)
  • 1 lb ground beef
  • 1 packet of Taco Seasoning like Old El Paso
  • 1 green pepper diced
  • 1 tomato diced
  • 1 red pepper diced
  • Shredded Mozzarella cheese
  • Shredded Cheddar Cheese
  • 3 green onion springs chopped
  • 2 Jalapeno peppers (optional)
  • 1 can refried beans from Old El Paso

Instructions

  1. Put the ground beef in a skillet and 1 onion.  Cook until meat is evenly browned.  
  2. Add the taco seasoning and the can of refried beans (this
    way the beans are incorporated well with the beef and more evenly spread across the nachos).
  3. Pre-heat oven to 400 degrees F
  4. Line 2 cookie sheets with parchment paper and lay out your Doritos and Tostito Chips (equal parts)
  5. Top your chips with veggies: Peppers, tomatoes and beef and
    bean mixture
  6. Next add your shredded cheese over the chips, veggies and beef and beans
  7. Garnish with spring onions and Jalapeno peppers 
  8. Bake at 400 degrees F for 6 minutes or until cheese melts and bubbles
  9. Optional: top with sliced black olives

Notes

Serve with salsa and sour cream
