Easy Keto Walnut Cookies Recipe

If you are a nut fan like I am, you will love these soft, melt in your mouth cookies. These walnut cookies Keto style are a wonderful gluten free, low carb and sugar free alternative. You can also call them Keto almond nut cookies since we are using almond flour for this recipe! Whether you call these cookies walnut or almond nut, these cookies are so buttery, nutty and sweet that they totally curb cravings for those other more decadent cookies. Best of all these cookies do not taste like a diet cookie at all!

Erythritol and Monk Fruit Sweetener

Lets talk about this sweetener. Generally, Erythritol and Monk Fruit blends are used in Keto recipes because they have no or negligible amounts of calories and carbs. They don’t raise blood sugar or insulin levels. This is why these sweeteners are considered good alternatives to sugar.

These are the best Keto cookies I have made so far. As long as you have a food processor you can make these cookies in no time. All you have to do is combine all the ingredients in a food processor until it forms into dough and scoop it out onto a baking sheet.  Quick and easy, just the way I like it!

Easy Keto Walnut Cookies Recipe

Soft, nutty and buttery Keto walnut cookies.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • ½ cup walnuts
  • ½ cup almonds
  • ¼ cup coconut flour
  • ¼ cup Lakanto Sweetener Erythritol Monk fruit blend
  • 1 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 8 Tbsp unsalted butter
  • ¼ tsp pink Himalayan salt

Instructions

  1. Preheat oven to 325 degrees F. and line a baking sheet with
    parchment paper
  2. Put all nuts in food processor and pulse until well ground.
  3. Add coconut flour, sweetener, nutmeg, salt, vanilla extract
    and butter. Process until fully combined and dough is soft.
  4. Using a spoon, scoop out 16 -18 balls onto the parchment
    paper and flatten them out with your spoon or hand as baking with coconut flour
    the cookies will not spread out much.
  5. Bake for 13 minutes.
  6. Remove from oven and let sit on the cookie
    sheet for an additional 15 minutes before removing them off the cookie sheet.

Enjoy these cookies with a hot cup of coffee like I do.
