No Bake Chocolate Energy Bites with Dates

These easy no bake, gluten free Chocolate Energy Bites are a perfect healthy snack and they are very convenient to grab when you are on the go. My kids always grab a few on their way out the door first thing in the morning before heading out to school.

You will feel like you are having a treat but minus the guilt since they are healthy and high in protein.  They are also an excellent breakfast or snack idea for kids to make with you!

Superfood Ingredients

The ingredients that go into these chocolate energy bites are considered super foods and have so many health benefits:

Dates are high in fiber and high in disease fighting antioxidants. They are also packed with many vitamins such as B1, B2, B3 and B5 as well as A1 and C and D. Dates are good for bone health and are amazing at increasing your energy levels due to the natural sugars found in them.

Cashews and Walnuts are both packed with vitamin E and are rich in healthy fats which is known to lower your bad cholesterol levels. These nuts have high levels of DHA as well as omega 3 fatty acids which is proven to promote good brain health. Not only that, but the magnesium found in these nuts keeps your bones healthy.

Cocoa Powder is known to increase your serotonin levels in your brain which helps improve your mood and lower your stress levels. Cocoa Powder helps regulate your blood sugar levels and lowers any inflammation in your body and reduces your risk for heart disease and stroke.

These health benefits which I have listed are just the tip of the iceberg. There is so much more to these ingredients that its mind blowing.

Storage

I love making big batches of these Energy Bites, especially since they are easy to make and also store well in the freezer.  Store the energy bites in an air tight container in the refrigerator for a week.

To freeze them, place the energy bites on a cookie sheet and place the whole sheet in the freezer for an hour before transferring them into a freezer bags. This ensures that the energy bites won’t stick together and will be easier to pull out of the bag one at a time.

A Quick Breakfast Idea - Chocolate Coconut Date Energy Bites

Makes: 30 – 34 Bites

Prep Time: 10 minutes

Ingredients:

½ cup walnuts

½ cup cashews

30 – 40 pitted dates roughly chopped

2 Tbsp unsweetened cocoa powder

1 pinch salt

½ cup shredded unsweetened coconut for rolling (optional)

Directions:

1. Place all ingredients minus the shredded coconut into a food processor and pulse until all ingredients are well chopped and almost paste-like.

2. Place shredded coconut into a bowl (if using).

3. Transfer ingredients from food processor into a plate or a clean counter top and start to make small bite size balls.

4. Roll balls into the shredded coconut if desired.
