Do You Peel Eggplant Before you Cook It?
There is no need to peel the eggplant before cooking it because it is completely edible. IF you really don’t like the taste of the skin, it will come off easily once is been baked in the oven so there is no need to labor over peeling it raw anyway.

I wouldn’t recommend making these ahead of time. Eggplant can turn a little grey if exposed to air for too long so its really not worth it. The good news is that these eggplant pizzas are super quick to put together so you won’t need much time to make them.

One tip when you purchase your eggplant for this recipe is to look for an eggplant that is more uniform in size all the way down if possible. Many eggplants have a thin neck and get larger at the bottom. This can result in getting small circles from the top and then very large circles from the bottom.

Why Do You Salt Eggplant

As simple as this recipe is, it can most certainly be served as an appetizer at your next gathering, even if it is a formal event. If you are going to serve these as an appetizer I would wait until your guests arrive and then put them in the oven so that they can be served hot.

Prep Time: 10 minutes
Bake Time: 15 minutes
Ingredients:
- 1 large eggplant cut into 1/4 inch slices
- 1 tablespoon salt
- 1/4 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup pizza sauce or marinara sauce
- 1 cup mozzarella cheese shredded
Directions:
1. Sprinkle the eggplant with salt, let sit on paper towels for 10-15 minutes to draw out any extra liquid. Then rinse and pat dry with a paper towel
2. Preheat oven to 400F and place eggplant slices onto a baking sheet lined with parchment paper. Bake for 15 minutes
3. Remove from oven and sprinkle the eggplant slices with garlic powder and Italian seasoning and top each slice with a tablespoon of pizza or marinara sauce and a sprinkle of cheese
4. Place in the oven and bake for 15-20 minutes or until cheese is fully melted
