These easy, no bake, gluten free Chocolate Energy Bites are a perfect healthy snack or breakfast. They are very convenient to grab when you are on the go and are full of superfoods and high in protein.
Ingredients
walnuts
cashews
pitted dates (medjool or other)
unsweetened cocoa powder
salt
shredded unsweetened coconut for rolling (optional)
Place all ingredients minus the shredded coconut into a food processor and pulse until all ingredients are well chopped and almost paste-like.
Place shredded coconut into a bowl (if using).
Roll balls into the shredded coconut.
