Keto Low Carb Mexican Zucchini Lasagna

This Mexican zucchini lasagna is truly satisfying.  It’s loaded with gooey cheese, and spicy taco seasoned chicken and saucy salsa blend that will make you forget that this is a low carb dish!

This easy zucchini lasagna recipe is by far the best Keto dish. I may never purchase regular lasagna noodles again! You won't miss the carbs in this dish.

To prevent the lasagna from getting watery, sprinkle the zoodles with salt and pre-bake them to remove excess moisture 


– olive oil – ground chicken  – onion  – fresh garlic roughly chopped –Green Pepper – taco seasoning  – diced tomatoes – salsa of your choice  – ricotta cheese  – egg – cilantro roughly chopped  – spring onions (green onions)  – Mexican blend shredded cheese

Meal Prep tip: bake the zucchini noodles the night before and wrap them in paper towel.
