This is an excellent meal prep dish for busy weeknights. Just wash and cut up the veggies the night before!

Sautee the beef in a single layer in a wok or large skillet. Lightly season with salt and pepper. When browned on both sides, transfer to a plate. 

Add onions, bell peppers, celery and bok choy. You can try other vegetables as well like: broccoli, sugar snap peas, carrots, colored peppers, mushrooms, baby corn, water chestnuts etc. 

Cook the harder vegetables in a little oil first that will take longer to cook. Then add any leafy greens and mushroom once the harder ones are tender.

Coat with soya sauce, hoisin sauce and chili oil with black beans. Add back the beef. Stir fry for a couple more minutes until perfectly blended. Serve with udon noodles or rice.
